There are lots of ways to make peach dumplings, but Jerry follows the base line recipe at thepioneerwoman.com. He diverges from the recipe by using a cast iron skillet instead of a baking pan and adds several tweaks of his own. He says it’s easy and quick to prepare and also includes some surprising ingredients. It makes a wonderful treat for the holidays.
2 cans refrigerated Crescent Rolls
1 16 ounce package of frozen peach slices
1 1/2 sticks of butter
1 1/4 cups of sugar (half granulated sugar and half brown sugar)
2-3 tablespoons vanilla extract
1 tablespoon cinnamon
1 can Sprite, 7-Up, Or Mountain Dew
Extra cinnamon for sprinkling
Extra butter for the cast iron skillet
Butter the cast iron skillet. Roll 2 peach slices in each crescent roll and place in the skillet.
In a separate pan, melt the butter, then add the sugars, barely stirring. Add vanilla and cinnamon, stir once or twice, then pour over the rolled peaches in the skillet. Pour 3/4 of a can of Sprite around the edges and in the middle of the skillet. Sprinkle with cinnamon on top and bake at 350 degrees for 40 minutes. Remove from the oven and allow it to cool for 10 minutes before serving it in the cast iron skillet. Heaven!
